The "Auslese" label (standing for "high quality") is only given to wines that have passed stringent quality standards. Only choice and fully ripe grapes with a high must weight are used. This is what gives Riesling wines their distinctive aroma, fine bouquet and guarantee their characteristic interplay of fruit and acid.
